The idea of Nolla (meaning “zero” in Finnish) was born out of a desire to serve great food without compromising sustainability. We aim to minimise the amount of waste we produce with everyday actions that follow our sustainable values and waste-free ideology. All of our ingredients are mindfully sourced from local farmers, fishermen and producers, with a strong focus on sustainability. We place a heavy emphasis on seasonality, which is how we can offer the best of local produce all year round without having to sacrifice our values. Our in-house composter enables us to close the loop by offering our suppliers composted soil to take back to their fields in return for their great ingredients.
Our approach to sustainability goes beyond the basics like food packaging and plastic. We have thought of every little detail, from our clothing to our energy consumption.
Nolla also has food-tracking software used among corporate food service companies to keep track of what sells and what rots.
